Meet the Roman 80, the flagship and largest model in our refractory oven line. This oven features a hemispherical refractory dome, a double-wall insulated & UL-approved vent system, a hand-laid brick archway, and a beautiful granite shelf. Each one is customizable with your choice of smooth stucco or gorgeous tile finishes, as well as a stainless steel or copper band along the base.

While still maintaining a refined footprint, the Roman 80 offers the most expansive cooking surface of our refractory models. It has an interior diameter of 32", providing you with over 800 square inches of cooking space. It is the perfect "Goldilocks" size—large enough to handle multiple dishes or larger pizzas, yet efficient enough for a quick weeknight dinner. From charred Neapolitan pizzas to slow-roasted meats, the Roman 80 delivers professional-grade results every time.

Roman 80 Tile Options

The Roman 80 is our first oven to be availble with three new premium tile selections from Spanish tile manufacturer Ezzari: Alexander, Gin Fizz, and Blue Lagoon. These tiles combine matte and glossy finishes in curated palettes that change with light, giving your oven a stunning layered, dynamic look.

World Class Performance

2.5” Thick Dome:
Our 2.5” dome is the thickest on the market, engineered for superior heat retention and thermal mass. With an operating range from 200°–1000° F, the Roman 80 can transition seamlessly from baking sourdough bread to firing off pizzas in just 60–90 seconds, and retain heat for 48 hours.

Hemispherical Design:
The Tuscan-style, hemispherical dome is the secret to its versatility. As our largest refractory option, the increased internal volume and height allow you to roast larger items—like whole turkeys, prime ribs, or multiple cast-iron skillets—with ease.

2” Firebrick Floor:

The oven floor is crafted from 2” thick industrial-grade firebrick. This extra-thick floor acts as a heat battery, allowing you to cook dozens of pizzas back-to-back without the stone temperature dropping.
